The herb beds serve a triple purpose: they are very decorative and fragrant, and they inspire the creation of all naturals massage oils, aromatherapies, exfoliations and scrubs. The garden also grows Aloe, an essential component of the spa’s famed Aloe Vera and Rum Massage and the Mellow Aloe Wrap.
Last but not least, says Director of Spa Services Bruce Cavan the abundant and flourishing herb garden of Larimar Spa supplies the resort’s 4-diamond rated American steakhouse, the Sunset Grille with a cornucopia of fresh lemon grass, parsley, chives, sage, thyme, rosemary and mint, also serving the resort bars for the preparation of delicious Cuban Mojitos.
Cavan reports he started experimenting with soil and seeds when Larimar Spa first opened a number of years ago. Assisted by enthusiastic gardeners, Larimar Spa’s herb garden thrived, sheltered from wind & kissed by the sun.
The fresh herbs were welcomed with great appreciation in the kitchen where executive chef Hector Espinoza reports that once you go fresh, you never look back.
Previously dependent on the availability of fresh herbs from suppliers Espinoza is also applauding Cavan for his future initiatives which include growing tomatoes and a few delicate varieties of salad greens.
