The Sunset Grille presents a much-enjoyed evening with Castello Banfi Wines

The culinary brigade of the Hilton Aruba Caribbean Resort & Casino under the expert guidance of Executive Chef Matt Boland presented a delightful 4-course dinner at the Sunset Grille this past weekend, carefully paired with the award-winning wines of Castello Banfi winery.

Family-owned Castello Banfi is dedicated to the pursuit of excellence through research and continuous improvement, explained special guest Sales & Marketing Director Rodolfo Maralli, who together with Banfi’s Export Director to the Caribbean Raymond Rivera, a Certified Wine Specialist, complemented the food with tasting notes, and commentary about the wines produced in the territory of Montalcino and beyond, including Strevi and Piedmont.  

Dinner took off with a delicate home-cured Dilled Salmon, with Caviar and Crème Fraiche, served with the sparkling Banfi Brut, and went on to feature Caribbean Roasted Pumpkin Soup, cream of red bell peppers, with a bacon wrapped scallop in the center. The flavorful soup was paired with crisp and fruity Banfi Fontanelle Chardonnay.

The main course, a generous Rack of Lamb Persillade, with parslied walnuts and Gorgonzola, in a Cabernet sauce with Pommes Dauphinoise, went well with Banfi Brunello di Montalcino. The wine has been voted Best in Class Italian at the Winemaker Challenge, many years in a row.

For the Grand Finale, a unique Caribbean Trifle delivered layers upon layers of sweet Black Rice, Mango and Coconut, escorted by a flute of the elegant Rosa regale, a red sparkling wine.

Romar Trading, distributor of Banfi wines in Aruba co-hosted the evening with wine artist Clive Faustin who worked together with chef Matt Boland on the creation of the menu.

Faustin reported that Castello Banfi is the first winery in the world to be awarded international recognition for exceptional environmental, ethical and social responsibility as well as an international leader in customer satisfaction.

The Wine Pairing Dinner delivered a marvelous evening, taking diners on a delectable tasting voyage of the most famous wines by Castello Banfi, paired with a truly festive, expertly presented 4-course menu.

Aruba’s community of foodies were pleased to revisit the Sunset Grille and reconnect with the its fine culinary tradition.
