Pega Pega Café & Beach Bar at the Manchebo Beach Resort & Spa recently unveiled its new lunch & cocktail menu, conceived and presented by executive chef George Hoek.
A few months ago, when Chef Hoek joined the Manchebo’s culinary team, he promised to introduce a “Sun Splashed” menu to the resort’s Café & Beach Bar, thus elevating beach cuisine to an ultimate high.
True to his promise, the chef delivered a contemporary menu, listing many favorite dishes from around the world, deriving inspiration off US, Mexican, Thai, Jamaican, Cuban, Greek and Mediterranean menus, all served with a tropical, Caribbean flair.
For starters the Wings on Fire, the Chicken Quesadilla and the Nacho Chips & Cheese, are served in abundance, nicely garnished and accompanied by delicious dips.
Chef’s Sun-Sational Salads feature fresh and healthy ingredients brimming with authentic flavors.
The Blue Mermaid which heaps sliced mango and banana on mixed greens, onions, and peppers with caramelized walnuts, sprinkled with lemon and pepper vinaigrette, competes with the terrific Shrimp Salad, flavored with Jamaican jerk spice, papaya salsa and ginger cream dressing for the honor of being the #1 top seller.
The sandwich board is equally inventive as Cudarebo Tacos translate into flour tortillas filled with seared filet of grouper, garnished with diced tomato, served with fruits and a garlic-cumin aioli. The Cuban pressed Chicken Sandwich with cilantro adobbo, served on foccacia roll topped with melted Swiss cheese, gives the Mediterranean Grilled Vegetable Wrap competition, on the list of jawbreakers.
Most original creation on the refreshing lunch menu is the Grilled Grouper Rueben Sandwich on brown rye bread, topped with sauerkraut, Thousand Islands dressing, capped with melted Swiss cheese, served with French fries.
While Chef Hoek went out of his way to bring novelty to mid-day platters, the classics also make an appearance on his menu starring oversize Beef Burgers, Philly Cheese Steak Sandwiches and Hot Dogs.
The Pega Pega tropical & frozen cocktail list, with fresh fruit or ice cream smoothies, daiquiris, coladas and margaritas, leaves nothing out, including Yellow Birds, Sex on the Beach and Mudslides, making a lunch-time brain-freeze, extremely easy to get!
