Pairing great food with excellent wine at the Screaming Eagle Tuck Beckstoffer Winemakers Dinner receives a standing ovation

Friends of Screaming Eagle restaurant and fans of its executive chef Erwin Hüsken enjoyed a culinary extravaganza on Saturday, October 6th, when Chef Erwin teamed up with Chef Bram Verleg of the Flying Fishbone restaurant in Savaneta, to create a truly impressive pairing, befitting the fine wines of Tuck Beckstoffer, a wine company from St. Helena, California.

The menu for the evening took off with a Mousse of veal sweetbread, accompanied by port jelly, served on rye bread as Amuse, which combined well with a Zonin Grand Cuvee. For the first appetizer, guests enjoyed a Tartar of scallop and Salmon with caramelized korubuta pork belly, served with mango and caviar of dutch herring, accompanied by a 75 Sauvignon Blanc. The exquisite second appetizer, a Brill Fillet lacquered with veal stock on puree of celeriac and served with spaghetti of string beans and chanterelle dressing, was paired with a Hogwash Rose. As the first main course, guests were delighted with the pan fried Confit of Veal Shoulder, with a hazelnut-herb crust, deep fried capers, sauce choron and a dressing of cocktail onions, bacon and parsley, pairing nicely with a 75 The Sum. The second main course provided an elegant take on the traditional Beef Wellington, with a beef tenderloin baked in puff pastry served with haricots verts, grated fresh black autumn truffle and duck liver sauce, complimented well by a 75 Cabernet Sauvignon. For dessert, a Tarte Tatin of figs with almond ice cream was paired with an Offley Tawny Porto.

The pairings were so successful that diners gave Chefs Erwin and Bram a standing ovation at the end of the dinner.

The inspiration for the evening of culinary delights came from a recent trip that Chef Erwin, along with his friends and colleagues Sven Schneider, Marcel van Berkum and Raymond Kock from The Flying Fishbone restaurant, to the American winemaking region of the Napa Valley.

During their visit to the area, the group visited a number of vineyards and wineries, including Beckstoffer vineyards, where they were delighted by the quality of the wines.

Naturally, they wanted to share these delicious wines with their loyal friends and fans back in Aruba. Hence the need for a Tuck Beckstoffer Winemakers Dinner, in which the superb wines were matched perfectly to each individual course.
