Matilde’s restaurant has for many years opened the annual Asparagus season, or to be exact, the famous “Dutch
Asparagus” season, with a week-long celebration of perfectly paired food and wine.
In Holland they refer to the elongated, elegant vegetable as “white gold,” and it is considered a true delicacy, so visit

This year’s harvest, explains the Aruba Trading Company’s wine expert Jorge Curiel, was very challenging and thus very exciting. The weather conditions were not always perfectly favorable for growers. Growers were expected to start harvesting at the end of April, yet surprisingly some lucky growers were able to begin early, in the second week of April. In spite of lower temperature in Europe mid-March, consumers can still expect an excellent crop with good quality, super flavorful Asparagus stalks going to market.
Matilde’s Executive Chef Linda Pool was extremely excited to receive the first case of the 2008 crop on Friday, April 25th. Her special asparagus menu prepared in her head, way in advance, immediately translated itself into reality, accompanied with the fine wines of the Aruba Trading Company each course appropriately escorted and paired.
The menu, replete with traditional Dutch Asparagus recipes also received an injection of Linda’s creativity and
ingenuity inspired by different culinary traditions from around the world. Curiel also picked the wines from around the globe, Australian, French and Italian, to enhance the experience.
