Duo of Chef Dazzle Diners at the Essence of Burgundy

The Essence of Burgundy Event at Screaming Eagle Restaurant, organized by Pepia Est, local purveyors of fine wines and spirit, was a huge success and all food and wine pairings presented that evening were very well received by a cheering crowd of food & wine aficionados.

Friends of Screaming Eagle restaurant and fans of its executive chef Erwin Huskens attended a culinary extravaganza this past weekend featuring a special Louis Jadot menu. Chefs Erwin Huskens teamed up with Chef Bram Verleg, of the Flying Fishbone to create a truly impressive pairing, befitting the fine wines of Louis Jadot, a French wine company which produces and markets Burgundy wines.

The menu took off with Canadian lobster, accompanied by apple, curry mayonnaise and Dutch herring caviar which was paired with Chassagne Montrachet, Domaine du Duc de Magneta, 1er Cru, Clos de la Chapelle; The first appetizer delivered pan fried veal sweetbreads over mousseline sauce flavored with smoked celeriac and morel, paired with Corton-Charlemagne, Grand Cru; The second appetizer revealed pan fried Norwegian halibut with aligot of brie de meaux cheese, and a duck liver curl over red wine reduction, paired with Gevrey-Chambertin Estournelles Saint-Jacques, 1er Cru. The much-applauded main course Grilled NY striploin of American bison served with sweet potatoes, haricots verts and melted café de paris butter paired with Pommard Grand Epenots, 1er Cru, was followed by Époisses de Bourgogne cheese, served as crème brûlée, escorted by a cumin puff pastry and apple marmalade, paired with Corton Greves, Grand Cru, for dessert.

Michael v/d Berg of the Pepia Est Wine Company, importers of Louis Jadot wines to Aruba, reported that Louis Jadot grows its own grapes operating prestigious vineyards on 380 acres in Burgundy, and producing only boutique, artisanal wines. Maison Louis Jadot was founded by Louis Henry Denis Jadot in 1859, but has in reality been in business with the Beaune and the Clos de Ursules vineyards since 1826!

The lucky 30 dinner guests attending the Essence of Burgundy Louis Jadot dinner experienced an unforgettable exclusive menu and wine pairing, as presented by Chefs Erwin and Bram, who were congratulated by Larry Nocera of Kobrand Wine and Spirits, for their culinary gifts.
