The Marriott Aruba Resort invited members of the business community for the two-day soft-opening happening of the famed Ruth’s Chris steakhouse. We were treated like royals, with individual reservations, and we were allowed the run of the menu, which was very generous. My tab for two, $160.-, was picked up by the hotel. Thank you, thank you. While the ambiance and the décor spell subdued-elegant, the food has a few irresistible selling points. It arrives at the table, hot, sizzling, the meat is roasted in 1800 degree ovens, which cannot be found in any ordinary household. These specialty ovens are what makes the difference at the New Orleans-flavored Ruth Chris Steakhouse. Unlike the stone restaurant where you end up wearing your meal as the sizzling oils and sauces liberally spray diners, the Ruth Chris white China plates somehow do not, they hiss, they crackle, but do not splatter . . . what’s the secret, besides USDA Prime? Handsome Executive Chef Charles Wagner, yes, the pastry wizard is now at the helm, which by itself is a good reason to visit. My pre-opening dress-rehearsal visit was spectacular, and I reconnected with Eduard Renaud who is the restaurant’s general manager, and a gracious host. Located in the old Tuscany space, you will recognize many staff members from their Italian period . . .
